Balsamic Roasted Pork Tenderloin

2 Pork Tenderloins - About 1.5 lbs
Balsamic Vinegar
Olive Oil
Minced Garlic
1/2 Red Onion
Salt and Pepper


Ok isn't this the most vague recipe ever? I used enough balsamic vinegar to rub in to the tenderloin and enough to coat the bottom of the glass baking dish so red onions can stew in balsamic/olive oil mixture but not swim in it. Drizzled Olive Oil over tenderloin and rub in. Season with minced garlic, salt, and pepper. Cut red onion in to slices ( half moon strings) and lay in the balsamic/olive oil mixture. Heat oven to 425 degrees. Cook time is 30 minutes per pound or when internal meat tempature reaches 160 degrees.

I served this dish with a spinach salad, but you can serve with what ever you would like.
